Tuscan Chicken Soup

 

(slow cooker recipe)

 

Ingredients:

 

1 cup Chopped onion

 

2 Tbsp Tomato paste

 

1/8 tsp Sea salt

 

1/4 tsp Black pepper

 

1 (15 ounce) can Northern White Beans

 

 

1 (14 ounce) can Chicken broth

 

1 lb Boneless, skinless organic chicken thighs, cut into small pieces

 

3 Garlic cloves

 

1/2 tsp Chopped fresh rosemary

 

1 (5 ounce) package of fresh baby organic spinach

 

1 tsp Sea salt

 

 

 

Directions:

 

Place all (9) nine ingredients in the slow cooker. Cover and cook on HIGH for 1 hour. Reduce heat to LOW and cook 3 hours. Stir in rosemary and spinach; cover and cook on LOW for another 10 minutes.

 

Makes 4 servings
