Black Bean, Quinoa and Sweet Potato Chili 


(slow cooker recipe)



2 (15 ounce) cans black beans, drained


1/2 cup Uncooked quinoa, rinsed


2 cup Vegetable broth, low sodium


2 (14 ounce) can diced tomatoes


1 medium Sweet onion, diced



2, medium Sweet potatoes, peeled and diced


2 tablespoons Cocoa powder


1 Tbs Chili powder


2 tsp Cumin


1/4 tsp Paprika


1 tsp Sea salt




Place all ingredients in the slow cooker. Cover and set slow cooker to low 8-10 hours or high for 5-6 hours..


Add extra chili powder, cayenne pepper to make it more spicy or add some honey to sweetend it up just a bit.


Makes 6 servings
