Turkey, Spinach & Quinoa Casserole

 

Ingredients:

 

2 lb Ground turkey

 

2 cups dry quinoa

 

1 medium onion, chopped

 

4 medium garlic cloves, crushed

 

 

4 cups spinach, chopped

 

1 cup Panko bread crumbs (plain)

 

2 cups tomato sauce

 

2 cups mozzarella cheese, shredded

 

 

1/4 tsp tyme, dry

 

2 tsp basil, dry

 

Sea salt & pepper to taste

 

1 Tbsp Olive oil

 

 

 

Directions:

 

Cook quinoa per package instructions. Add to a large mixing bowl; set aside.

 

Preheat oven to 375 F degrees and grease 9x13 baking dish with coconut oil. Set aside.

 

Preheat skillet on medium heat , add ground turkey and sautee for 5 minutes until brown, breaking into pieces. Add to bowl of quinoa.

 

Return skillet to medium heat , add olive oil. Add garlic and onions and sautee until golden brown. Add spinach and saute until wilted. Transfer to bowl with quinoa and turkey.

 

In the same bowl, add tomato sauce, bread crumbs, cheese, thyme, basil, salt and pepper to taste. Mix enough to combine.

 

Transfer mixture into a baking dish and bake for 25 minutes. Serve immediately. Add Greek yogurt and salsa for added flavor.
