Sweet Potato, Brussels Sprouts & Sausage Breakfast

 

Ingredients:

 

 1 pkg. Aidells Smoked Chicken Apple Sausages (4 sausages)

 1 medium sweet potato, cubed small (2 cups)

 2 cups Brussels sprouts, quartered  

 1 yellow bell pepper, diced (1 cup)

 1/2 small sweet onion, chopped (1/2 cup)

 2 garlic cloves, minced

 

Directions:

 

  1. Boil/cook sausages in medium saucepan according to package. Cut into small 1” pieces when cool.

  2. In  large skillet on medium heat, add 2 tablespoons of coconut oil, sweet potatoes and Brussels sprouts. Cover and cook for 5 minutes and uncovered for an additional 5 minutes stirring occasionally throughout.  

  3. Add peppers, onion, and garlic to the skillet and cooked uncovered for 8-10 minutes.

  4. Add more coconut oil if vegetables start to stick to pan.

  5. Lastly stir in the sausage pieces, heat through, and serve.
