Red Lentil Pumpkin Chili

 

(slow cooker recipe)

 

Ingredients:

 

2 - 15oz. cans Mixed Tri-Bean Blend Beans (kidney, pinto, black beans) 

 

2 Cups Vegetable broth, low sodium

 

1 cup Red lentils

 

2 - 15oz cans Fire-roasted diced tomatoes

 

 

1 Cup Pumpkin puree

 

1/2 Cup Sweet onion, chopped 

 

1 Tbs Cocoa powder

 

2 tsp. Chili powder

 

1 tsp. Sea Salt

 

1/2 tsp Cinnamon

 

 

Directions:

 

Place all ingredients to the slow cooker and stir.  

 

Cook on high 4-5 hours or Low 8-10 hours.
