
Quinoa Stuffed Peppers
Ingredients:
4 Yellow organic bell peppers
2 Tbsp. Olive oil
1 Small onion (diced)
2 Cloves of garlic (minced)
1 lb. Ground turkey
8 oz. (approx. 1 cup) Diced tomatoes
8 oz. (approx. 1 heaping cup) Quinoa, cooked and cooled
8 oz. Ricotta Cheese
2 Tbsp. of Braggs 24 Herbs & Spices Seasoning
Mozzarella cheese to top
Directions:
Preheat oven to 350 degrees. Cut off tops off pepppers, deseed. In saute pan, over meduim heat, add oil, onion, and garlic. Saute for 2 minutes. Add ground turkey and cook throughly until brown. Add tomato and cook 2 minutes. Remove from heat and allow to cool. Add quinoa, cheese and seasoning and stir and combine. Stuff peppers and bake about 30 minutes. Top with some mozzarella cheese.
