Mandarin Orange Chicken

(slow cooker recipe)

 

Ingredients:

 

4 Boneless, skinless chicken breast halves 

 

1 Medium onion, thinly sliced

 

1/4 cup orange juice

 

1 tsp Braggs Organic 24 Herbs & Spices Seasoning

 

1/2 tsp salt

 

1 Can (11 oz) mandarin oranges, drained with 4 Tbs juice reserved

 

2 Tbs Bob's Red Mill unbleached flour

 

 

Directions:

 

Place chicken in slow cooker. Combine onion, orange juice, Braggs seasoning and salt. Pour over chicken. Cover and cook on low 4-5 hours.

 

Remove chicken keep warm. Reserve cooking juices.

 

In  medium saucepan over medium heat, combine reserved mandarine orange juice and flour. Stir until smooth.

 

Stir in chicken cooking juices. Bring to a boil. Stir and cook 2 minutes to thicken. Stir in mandarin oranges. Pour over chicken.

 

Enjoy over Lundberg Organic Brown Long Grain Rice and vegetables on the side.
