Healthy Carrot-Oatmeal Cookies
1/2 cup Whole-wheat flour
1/2 cup Old-fashioned rolled oats
1/2 tsp Baking powder
1/8 tsp. ground nutmeg
1/4 tsp sea salt
1/4 cup Maple syrup
1/4 cup Sunflower oil
2 Eggs beaten
1/4 cup unsweetened shredded coconut
1/3 cup Shredded carrots
1/4 cup cashews, chopped
1/4 Goji berries
Preheat oven to 350 degrees.
Combine flour, oats, baking powder, nutmeg and salt in mixing bowl and mix well with a stand-mixer until blended.
In a seperate bowl, combine maple syrup, sunflower oil, eggs, coconut, grated carrots, chopped cashews and goji berries. Stir until blended.
With mixer running on low speed, add the maple syrup mixture to the dry ingredients. Increase speed to medium and mix until a batter forms.
Drop cookie dough onto prepared cookie sheet and bake 10-12 minutes until cookies turn brown around edges.
