Healthy Banana Chocolate Chip Oat Bars
2-1/4 Cups Bob Red Mill Old Fashion Rolled Oats
1/2 tsp Baking Powder
1/2 tsp Baking soda
1/4 tsp Sea Salt
1 tsp cinnamon
3 Ripe bananas
2 tsp Vanilla extract
1/4 Cups Unsweetened applesauce
1/4 Cup Honey
1/3 Cup Chocolate chips
Preheat oven to 350 degrees F. Spray 8x8 inch baking pan with coconut oil.
Place oats into food processor and blend for 1-2 minutes until oatmeal resembles flour. Transfer into a medium bowl and whisk baking powder, baking soda, salt, cinnamon and set aside.
Place bananas, vamilla, and honey into blender; blend 1-2 minutes or until smooth and creamy. Add to flour mixture until combined. Fold in chocolate chips. Pour batter in greased pan, spreading batter evenly. Bake for 15 minutes or until knife inserted in center comes out clean. Cool for 10-15 minutes and drizzle melted choclate chips on top of bars.
