Coconut Lemon Balls

 

Ingredients:

 

2 cups Almond meal

 

2 Tbsp Maple syrup

 

Juice from 2 lemons (about 1/2 cup)

 

 

2 tsp Pure vanilla

 

1/4 cup Coconut oil

 

Bob's Red Mill Unsweetened Flaked Coconut for rolling  

 

 

Directions:

 

Mix all ingredients together except shredded coconut. Form dough into balls and roll them in shredded coconut until completely covered.

 

Store in the refrigerator for up to a week.
