Chickpea PB Blondies

 

Ingredients:

 

1 can of chickpeas, rinse and drained

 

1/3 cup vanilla whey protein powder or 1 scoop vanilla Shakeology

 

1/3 cup all natural peanut butter

 

 

1/3 cup maple syrup

 

1 egg

 

1/4 tsp baking powder

 

mini chocolate chips to taste (Enjoy Life semi-sweet chips-dairy, nut & soy free)

 

 

Directions:

 

Preheat oven to 350 degrees. Place all ingredients in blender or food processor (except choclate chips); blend until smooth. Spray 8x8 inch baking dish and spread batter inside evenly. Sprinkle choclate chips on top of batter. Bake for 15 to 20 minutes.
