Banana Oatmeal Cups

 

Ingredients:

 

1-1/4 cups Rolled oats

 

1 Medium banana

 

3 Tbs Organic raw honey

 

Egg whites from large egg

 

Cup Filling:

 

Organic Plain Greek yogurt

 

1/2 tsp. Fig/apricot jam or Honey

 

Fresh berries 

 

 

 

Directions:

 

 

Preheat oven to 320 degrees and spray muffin pans with coconut or olive oil.

Combine rolled oats, banana, honey and egg whites in large mixing bowl. Use 1/4 cup mixture to put into muffin tins and press down to shape into cups. Bake for 15 minutes or until edges are brown. 

 

When cups are cool spoon in plain Greek yogurt, top with jam or honey & berries for a touch of sweetness.

 

*Recipe makes 6 muffin cups
