Baked Mac & Cheese

 

Ingredients:

 

3 cups of organic pasta

 

1/4 cup organic butter  

 

3 Tbsp. 100% Whole Wheat Flour (Bob's Red Mill) 

 

1/4 tsp. salt

 

3/4 cup plus 2 Tbsp. milk

 

1-1/2 cups shredded cheddar cheese

 

1/2 cup whole-wheat panko bread crumbs

 

Directions:

 

Preheat oven to 350 degrees. Coat a 2 qt. (8x8) square baking dish with coconut oil and set aside. Cook pasta as directed on package; drain and keep warm.

 

While pasta cooks, melt butter in medium saucepan. Add flour and salt; stir for 1 minute. Add milk and stir over medium heat until thick and bubbly. Remove from heat; stir in cheese until melted.

 

Toss together pasta and cheese sauce. Transfer to prepared dish and sprinkle evenly with bread crumbs. Bake for 20 minutes until heated through. 

 

To reheat leftovers, add milk to mac & cheese in sauce pan until heated thorughly. Add a little shredded cheddar cheese and enjoy!
